Head Brewer

George is something of a legend in the beer industry. With 27 years of experience under his belt, he is widely accepted as the (unofficial!) poster boy for Ontario Craft Beer. He’s quirky, creative, kind and a major beer geek, and can usually be found in the Brewery spreading his excitement to students and visitors alike.

George is something of a legend in the beer industry and is widely accepted as the (unofficial!) poster boy for Ontario Craft Beer. He’s quirky, creative, kind and a major beer geek, and can usually be found in the Brewery spreading his excitement to students and visitors.

George has an illustrious background that includes music, cycling and of course, beer. From a young age, George helped out around the house with pickling, making bread, gardening and tinkering with electronics and cars. His fascination with fermentation started with homebrewing root beers, beer and wine with his parents, and the discovery of British and German beers in his late-teens.

He made his way to the UK in 1986 with the intention of getting into independent music distribution, working in a theatre in Soho. While there, he discovered British ales. His mind was blown and his trajectory changed. He started working in a brewpub, moving from barman to cellar assistant before getting homesick for Canada and moving back in 1990.

George started his brewing career at Upper Canada Brew Co., staying there from 1991 to 1998, when Sleeman bought the brewery and moved production to Guelph. George moved on to work at a bevy of brew houses, including but not limited to: Amsterdam Brewery, Black Oak Brewery, Church-Key County Cider, Glenora Springs Brewery, Hart Brewery, Muskoka Brewery, Great Lakes Brewery, F&M (now StoneHammer Brewing) and Wellington Brewery.

With 27 years of brewing experience and a lifetime of epic tales of adventure, we are thrilled to have George as Head Brewer here at NCT Brewery!

Brad Barta

Assistant Brewer

Brad is not only the Assistant Brewer at Niagara College Teaching Brewery, but he is also a graduate of the NC Brewmaster and Brewery Management program! Brad brings 10+ years of brewing experience to the team and has been awarded many accolades including Taps magazine’s 2016 Golden Boot Award and has won multiple brewing competitions through Niagara College.

Brad is not only the Assistant Brewer at Niagara College Teaching Brewery, but he is also a graduate of the NC Brewmaster and Brewery Management program! As Brad tells it, he hails from “all over Ontario”. He has had the pleasure of living across most of our beautiful province, from Windsor to the North West, and many places in between! His passion for beer was ignited in his 20s when he spent time traveling through Germany, Belgium and the UK.

He started off home brewing and eventually into commercial brewing at WhiteWater Brewing Co. in the Ottawa Valley. His developing brew skills combined with years of small business management encouraged him to pursue this in a professional capacity with the eventual goal of owning his own brewery. So began his stint as a student, and now instructor, at NC Teaching Brewery.

Brad can usually be found sharing his passion and knowledge at our Teaching Brewery, guiding students through the fundamentals of brewing, or out pounding the pavement to promote his new venture, Wooden Horse Brewing Company.
